WHY DO WATER DROPLET DANCE WHEN SPRAYED On A HOT PLATE

The water droplet which is at room temperature falls on a  hot plate the water droplet dance around the plate. The water that is of 30degree Celsius when it falls on a hot plate of 150-200degree Celsius the water droplets get vaporized and form a layer of stream between the plate and the other water droplet which acts as a cushion. When the bottom of the water touches the plate the bottom layer forms a stream and the upper layer of water droplet tries to rest to the plate but the stream holds the water droplets upwards so the water droplet moves up and down .
